November is here and winter is coming. Back home in Alberta that would have meant snow on the ground and ice on your car but here in Chicago it means, green grass, fall colours on the trees and the occasional rainy day that keeps all of this autumn glory around for a few weeks more! November is also the start of hot pot season, rich stews and warming soups. I love the transition from summery salads and fresh bowls of fruit to the comforting aroma of a steaming pot of simmering broth on the stove.
This recipe is a 'build your own' recipe because once you have the broth you can set out all of the other additions in bowls on the table and let people dig into what ever they like best. Let people fill their own bowls with the add in's and keep the broth boiling hot on the stove so that they can dish it up themselves and the piping hot liquid will cook everything in their dish.
This method also makes it incredibly versatile (an important thing to me when cooking!). Don't have tofu? Try eggplant cubes! Not a fan of grated carrots? What about shredded zucchini.? Don't know what a water chestnut is and not interested in finding out? Chop up some celery for the same crunchy effect! You get the point. What ever is in your kitchen, dig it out and dig in!

People often ask me what my cooking 'style' is and I always struggle to explain it because it is so broad. The best summary is that I will cook anything as long as it is delicious, healthy and wholesome. That means free of chemicals, preservatives, additives, and byproducts. It also means everything in moderation, just because coconut oil is healthy does not mean we should add it to everything! Just because honey is a sugar does not mean we can not have it once in a while! You will not find any dry, bland, cardboard reminiscent food here, healthy can still be crave worthy! There is everything from gluten free, vegan, vegetarian, organic, local, and season recipes here, I hope you find something tempting!
