August in Cyprus means hot winds that carry the heavy scent of citrus blossom across the island. Grapefruit, Navel, Ovals and Valencia Oranges, Lemons, Pomelos and Mandarins burst into bloom and boxes of jewelled globes of orange, yellow and red fill every corner market. This summer salad is refreshingly crisp and will wake your taste buds up to a spicy, zesty start to the day!
One of the beautiful things about citrus in the summer is the amazing antioxidant boost that they give to your body to help prevent cancer and skin damage from all those rays of sun you are soaking up! To boost the health and flavour punch of this salad even more I have added a kick of spice from one of my favourite spice combinations - Chai.
Fresh ginger, cardamom, cinnamon bark, nutmeg, black pepper and anise seeds are boiled in honey and citrus juice to make a fragrant and health happy marinade that adds some sweet spice to this citrus rainbow.
According to Ayurveda (a long held traditional philosophy and medical system originating in India), the spices used in chai are "sattvic" and produce calming, clarifying and mentally vitalizing properties - sound like something we could use in everyday modern life?!

People often ask me what my cooking 'style' is and I always struggle to explain it because it is so broad. The best summary is that I will cook anything as long as it is delicious, healthy and wholesome. That means free of chemicals, preservatives, additives, and byproducts. It also means everything in moderation, just because coconut oil is healthy does not mean we should add it to everything! Just because honey is a sugar does not mean we can not have it once in a while! You will not find any dry, bland, cardboard reminiscent food here, healthy can still be crave worthy!
