I had a hard time coming up with a name for this little bowl of delight. With so many flavours, textures and uses the name just got longer and longer each time I tried to explain it. It's nutty, spicy, refreshing, crunchy, salty and can be used on just about anything!
If you ever find yourself stuck using the same ingredients to make slightly different variations of things like salads, stews, pastas, curries or roasts, this little bowl of wonder will not only change the meal of the week to something exciting but it will add a powerful hit of health benefiting nutrients to boot.
Pumpkin seeds, or Pepitas, are an often underused seed that take second place to more commonly pushed nuts like Almonds or Walnuts. But these little treats are loaded with magnesium, zinc and protein and free-radical blasting antioxidants, and are a great source of vegetarian iron.
When you think of mustard what comes to mind is probably a crayon yellow paste used reluctantly once a year on a synthetic tube of 'meat' - well throw that image out and join the world of mustard loving connoisseurs. Dry mustard seeds can be bought at most grocery stores and have a variety of uses. Mustard hosts a wealth of phytonutrients which have been shown to have beneficial effects on preventing gastrointestinal cancers. High in selenium and magnesiums mustard is also a powerful anti-inflammatory and has positive effects on arthritis.
Herbs and spices in general are known to have multiple culinary as well as medicinal properties with a huge range of health benefits. dried Coriander seeds and fresh Cilantro leaves with their blood sugar balancing, cholesterol lowering, phyto-nutrient dense properties are perfect examples of why we should be boosting our meals and our metabolisms with these healthful helpers.
So toss together what ever seeds, spices, herbs or nuts that you have and sprinkle liberally!
FRESH AND FIERCE EVERYDAY CRUNCH TOPPING
People often ask me what my cooking 'style' is and I always struggle to explain it because it is so broad. The best summary is that I will cook anything as long as it is delicious, healthy and wholesome. That means free of chemicals, preservatives, additives, and byproducts. It also means everything in moderation, just because coconut oil is healthy does not mean we should add it to everything! Just because honey is a sugar does not mean we can not have it once in a while! You will not find any dry, bland, cardboard reminiscent food here, healthy can still be crave worthy! There is everything from gluten free, vegan, vegetarian, organic, local, and season recipes here, I hope you find something tempting!
