You know you have found a kindred spirit when during a visit they ask, "do you need some beets?" and proceed to hand over half a dozen bags of cooked beets.
Beets are brilliant. They make me think of autumn, my yet to come to fruition interest in dip dying cloth, and my Ukrainian Grandmother who makes a mean borscht. These versatile little root veggies will knock your socks off with their sweet, earthy notes and hearty texture. Not to mention their nutritional value, given away by the quick to stain color! High in vitamin C, folate (pregnant ladies take note!), potassium and manganese, their health benefits are as rich as their texture.
Chowder is a loose term and I may be stretching it to its maximum with this recipe, but I think that the creamy, velvety beet and coconut base combined with loads of texture from the corn, parmesan, and chives definitely creates a strong contestant to be included in the alternative chowder family!

The best summary is that I will cook anything as long as it is delicious, healthy and wholesome. That means free of chemicals, preservatives, additives, and byproducts. It also means everything in moderation, just because coconut oil is healthy does not mean we should add it to everything! Just because honey is a sugar does not mean we can not have it once in a while! You will not find any dry, bland, cardboard reminiscent food here, healthy can still be crave worthy!
