A more accurate name for this soup would be Holy Moly It's Cold Buster Soup. It is cold. January in a city kind of cold. There is a difference between cold in the city and cold in the country. I just returned to Chicago from my parents farm in Canada, it is the same temperature in both places. But Holy Moly it feels cold here. Maybe it is the lack of white snow banks rolling across the fields to cut the wind, or that there is less tobogganing, skiing and skating to warm you up, or maybe it is the warmth of family and friends I am missing. What ever it is, the city seemed cold when I got up this morning. This soup combined with a hot cup of tea and a warm hug from a friend were just the ticket to nourish your body and soul and bust the chill away!
It only takes a few moments to prep and then the magic of a good long simmer does the rest as you bask in the steam rolling out of the pot and into your kitchen. Crusty warm bread would be brilliant with this (preferably with a hearty bit of melting butter on it some would argue!), or some grilled greens, perhaps a chard and kale mix, with fresh lemon and a nice olive oil drizzled on top as a side dish.
The freshness of the leeks and their subtle flavour is fantastic in lightening the heartiness of the potatoes. The silky vegetable broth makes this a great lunch or dinner with a side dish accompaniment. For those fighting the winter cold season the fresh herbs and metabolism boosting properties of leeks will have you on your way to wellness! So cozy up with a book or a table full of good people and dip down into a nourishing pot of comfort soup!
Potato and Leek Herbed Comfort Soup
People often ask me what my cooking 'style' is and I always struggle to explain it because it is so broad. The best summary is that I will cook anything as long as it is delicious, healthy and wholesome. That means free of chemicals, preservatives, additives, and byproducts. It also means everything in moderation, just because coconut oil is healthy does not mean we should add it to everything! Just because honey is a sugar does not mean we can not have it once in a while! You will not find any dry, bland, cardboard reminiscent food here, healthy can still be crave worthy! There is everything from gluten free, vegan, vegetarian, organic, local, and season recipes here, I hope you find something tempting!
