One of the first things to come up in my Mom's garden each year is the salad greens. A second planting later in the warm days of summer ensure that there is a constant supply and variety of options for a quick lunch that never gets boring.
My personal opinion on salads is that they are undervalued for the endless creativity that they provide. You can put anything in a salad! All you need is to make an exciting base, choose some nicely paired feature ingredients and finish with a texturally interesting topping! You can pick a theme like the Fresh Fruit Sweet and Savoury Salad below, or build it around a key ingredient like the tahini, in the middle eastern inspired Sparking Summer Chickpea Salad and I guartunee you will never be disappointed by salad being on the menu again!
Salads have somehow acquired a plethora of negative misnomers, as 'rabbit food', a vegetarian mainstay to be tolerated by not enjoyed, a dieters dilemma to be endured for the sake of a slim waist. If thinking of a salad conjures the image of a wedge of iceberg lettuce drenched in ranch dressing with some slivers of cucumber on top then lets change that view! Packed with fulfilling and satisfying blends of proteins, carbohydrates, vitamins, and antioxidants, these salads have the potential to be a complete and balanced meal that is delicious to boot! Make a bit extra and toss it in a jar with a tight fitting lid, layering them in the reverse of what you would do on a plate or in a bowl, and take them to go for your next work day lunch or weekend picnic!
So crack open the fridge, peek around your cupboards and see what splendid blend you can create!

People often ask me what my cooking 'style' is and I always struggle to explain it because it is so broad. The best summary is that I will cook anything as long as it is delicious, healthy and wholesome. That means free of chemicals, preservatives, additives, and byproducts. It also means everything in moderation, just because coconut oil is healthy does not mean we should add it to everything! Just because honey is a sugar does not mean we can not have it once in a while! You will not find any dry, bland, cardboard reminiscent food here, healthy can still be crave worthy! There is everything from gluten free, vegan, vegetarian, organic, local, and season recipes here, I hope you find something tempting!
